Saucy solution

Readers who have had difficulty sourcing Louisiana hot sauce, as specified in the Dean & DeLuca recipe for spicy chicken wings (featured recently in these pages), might like to substitute the widely available Louisiana Big Mamou Sauce, one of the Discovery Sauces, which not only sounds better but does the job perfectly. They are widely available.
