TO shake up old prejudices and open up a whole new world of possibilities, its has to be the Trimbach Gewurztraminer (Molloys and other outlets, about £9.50) well made, widely available and more affordable than many examples of Alsace's most distinctive wine. The style of this Gewurz - restrained elegance rather than fat opulence - makes it an equal partner for middleweight cheeses (see 4 above) without being overpowering. Strike out and be amazed.
