Ingredients
- Serves 3 as a main, 6 as a starter2 heads of chicory
 - 1 apple, skin on, sliced
 - 100g firm/hard goat’s cheese
 - A few walnuts
 - Dressing100ml olive oil
 - 1 tsp honey
 - 1 tbsp wholegrain mustard
 - 2 tbsp lemon juice
 - Salt and pepper

Leaving the chicory leaves whole, arrange them on a plate and dot over cubes of the cheese and slices of apple.
Make the dressing by whisking the ingredients together in a bowl and seasoning well. Drizzle the dressing over the top of the salad and scatter a few walnuts over the top before serving.
