Ingredients

 - 2 tbsp olive oil
 - 1/2 onion, peeled and finely chopped
 - 1 garlic clove, peeled and crushed
 - 2 tbsp tomato puree
 - 2 eggs
 - 1/2 cup grated cheddar cheese
 - 1 lb ground beef
 - 1/2 cup breadcrumbs
 - 2 tbsp milled Chia seeds
 - 1 tsp salt
 - 3 tbsp finely chopped oregano
 - 3 tbsp finely chopped parsley
 - 3 tbsp hot sauce/chilli sauce
 
Preheat the oven to 200 degrees C/400 F/gas 6. Line a baking sheet with parchment paper.
In a large frying pan, heat the oil over medium heat.
Peel and finely chop the onion, add to the pan, and cook for 4 minutes. Peel and crush the garlic clove, add to the pan, and cook for 2 minutes. Add the tomato puree to the pan, and cook another 2 minutes, stirring continuously. Remove the pan from the heat and allow to cool a little.
In a large bowl, beat the eggs; then add the beaten eggs and all the remaining ingredients into the frying pan. Mix with clean hands until well combined.
Form the mixture into 18 meatballs measuring around 2 inches in diameter. Lay the meatballs out on the baking sheet. Bake for 15 to 18 minutes until cooked through. Turn the meatballs occasionally, making sure they don’t burn underneath.
